Green Dumplings (Qing Tuan)
Qing dumplings, or literally Green Dumplings, are made of rice flour. With grass juice inside them, the dumplings appear green and bright. Qing dumplings taste light and aromatic. In Shanghai, eating Qing dumplings on Tomb-sweeping Day is a tradition.
San Xian Xiao Hun Tun
The size of "huntun" in Shanghai is quite different from those outside the city. The "sanxian huntun" in Shanghai contains only meat, or dried shrimp and mustard tuber. The so-called three delicacies of 'Sanxian" refers to eggs, shrimp and seaweed in the soup. With the sanxian soup, huntun wrapped with meat tastes smooth and delicious.
Yellow Crab Shell (Xie Ke Huang)
"Xie ke huang" literally means yellow crab shell and is a kind of Shanghai snacks. The name comes from the pastry's appearance since it looks like the color of a steamed crab shell. It is a kind of baked cake with sesames sprinkled on it. The stuffing tastes salty or sweet. The salty stuffing is made of shallot oil, fresh pork, minced crab meat or peeled prawns. The sweet stuffing is made of white sugar, roses, sweet bean paste or red dates.
