Tofu Pudding

Dou Hua is a Chinese dessert made with an extra soft form of tofu. It is also referred to as tofu pudding. Dou Hua in Sichuan is often made without any sugar at all, then served by pole-carrying or bicycle vendors with a number of condiments such as chili oil, soy sauce, Sichuan pepper, scallions, and nuts, and is sometimes eaten along with white rice as well.

Erjie Diced Rabbit

Erjie Diced Rabbit, which uses rabbit meat as its primary ingredient, is a very famous Chengdu snack. Diced rabbit meat is typically mixed with a prepared marinade. The wok is seasoned and then chili peppers and Sichuan peppercorns are flash fried to add fragrance to the oil. Then the rabbit is stir fried and vegetables, along with peanuts, salt black beans and sesame seeds, are added.
